Time: 40 minutes
2 tablespoons olive oil
1 shallot, sliced
2 red bell peppers, cored and sliced
1 can diced tomatoes
1 cup tomato sauce
1 bay leaf
1 tablespoon Italian seasoning
6 slices firm tofu
Chopped cliantro for serving
1 Heat the oil in a skillet and stir in the shallot. Saute for minutes.
2 Add the bell peppers, tomatoes, tomato sauce, bay leaf and seasoning then cook the sauce for 10 minutes.
3 Place the tofu slices in the hot sauce and cook 10 additional minutes.
4 Serve the tofu topped with plenty of sauce and chopped cliantro.
